If you love sweet potato pie or even pumpkin pie you will love this.
This snack is loaded with balanced nutrition you will not be able to get enough of. I call them sweet potato chips. Eat as much as you like! I promise you your body will thank you.
Ingredients
1 large sweet potato
olive oil (cold pressed)
cinnamon
What you will need
a mixing bowl
chopping board or plate
large dicing knife
baking pan
wax paper
Step one: wash off your sweet potato. Then cut it into medium or large slices. They should look like the shape of a chip.
Step two: Than dice the slices. You can cut them up in cubes but I just keep it simple and dice each slice about 3 to 4 times in random shapes.
Step 3: throw your diced potatoes into your mixing bowl and drizzle in your extra virgin olive oil. I use about 1/4 of a cup of olive oil (roughly). But use as you desire but make sure all the potato slices are covered in oil. Then sprinkle in your cinnamon. I eyeball it or till the sweet potato slices are slightly brown in color.
Step four: Its ready to go in the over at 350 degrees for 45 minutes. I like mine a bit crisp on the edge, so I leave them in for about 5 to 10 minutes more.
Step five: remove from over and let cool for 5 minutes.
